This week we get to talk about one of my favourite foods- sweet potatoes! I typically eat sweet potatoes a few times a week. It is such a healthy, versatile, filling, and delicious vegetable (technically a root tuber). Try them for breakfast in a hash with an egg, roasted with other vegetables, or in soup.
Here are some more great reasons to incorporate sweet potatoes into your diet:
1. They help stabilize blood sugar- full of fibre and complex carbohydrates, help you feel full longer
2. They support digestive health- an excellent source of fibre and resistant starch (a type of starch that helps feed your body’s “good” bacteria)
3. They have cancer fighting properties- rich source of antioxidants
4. They support healthy vision- contain carotenoids such as beta-carotene
5. They may enhance brain function- contain compounds such as choline and manganese that support brain growth, development, and electrical impulses
6. They support your immune system- anti-oxidants that prevent free-radical damage, Vitamin C for tissue repair, and Vitamin A that fights off infections
Sweet Potato Waffles
2 cups sweet potato puree 1/2 tsp salt 2 eggs
1 tsp cinnamon 2 cups oats 1/2 tsp nutmeg ground
2 tsp baking powder 1 cup milk
1 tsp baking soda 1 tsp vanilla
1. Grease and preheat waffle maker
2. Add all ingredients into a blender and blend until smooth
3. We eat these with a fruit sauce (warmed up and mashed frozen fruit) and maple syrup- ALL our kids eat these, usually served for supper Sweet Potato
Black Bean Burritos
• Add chili powder and a little cinnamon and salt to mashed sweet potatoes
• In a tortilla place sweet potatoes, shredded cheese, black beans, and roll
• Brush with melted coconut oil and bake at 375 degrees F for about 20 minutes until browned (I usually broil for the last few minutes to brown them up)
• Serve with sour cream and salsa
